DESCRIPTION
Grown at Rising Vineyards in St Andrews, Nillumbik Yarra Valley.
Whole bunch pressed to used French oak barrels for natural fermentation. Matured on lees for 9 months in barrel, then on lees for further 12 months in tank for extra complexity and smoothness. Bottled without fining or filtration.

NOTES
Custard apple, grapefruit, lemon barley, spices and pastry, apple blossom. Tastes smooth and creamy, bright, vibrant and long. Really a fun way to Chablis without the cost. A wine that embraces food matching, especially with bright light zingers—but rest assured holds its own as a solo player. Low preservative.
